Poncho Fox Distillery is a small-batch, craft distillery based in Canberra. Founded by Patrick "Pat" Dillon who also established Sly Fox Coffee, the distillery began as a COVID-19 lockdown project after years of experimental bespoke distilling. Poncho Fox focuses on bold, vibrant, and unapologetically original spirits distilled in Canberra, exploring reimagined gins, sojus, rums and signature absinthe.
